Mazzys-Bake-Off-613

Mazzy spent all last night judging the bake-off and finally narrowed it down to her five favorite baked goods to compete in the "BEST" category. She was very bias towards the pink offerings (I warned you), but she did pick one non-pink item (possibly because the kid's apron was pink).

I spent my time narrowing down the baking losers to compete in the "WORST" category.

Together, we've got all ten finalists.

To celebrate, we baked Mazzy's Macaroon Nests using our sponsor (and new favorite baking ingredient)— Monk Fruit In The Raw.

Monkfruitintheraw

Monk Fruit In The Raw is a new zero-calorie sweetener made with real fruit. It comes in packets and a Bakers Bag that measures cup for cup, so it's ideal for moms looking to cut added sugars without sacrificing taste.

Actually, we didn't bake Mazzy's Macaroon Nests last night— that's a lie. We baked them on the same day we baked the Rainbow Sprinkle Cookie Lollipops because that was the day Tastebuds let us use their ktichen. Have I mentioned how tiny my kitchen is? Anyway, you'll notice that Mazzy is wearing the same outfit which is why I couldn't keep up the charade.

My plan was to make another Mazzy baking tutorial video, but the truth is, a lot of the stuff Mazzy says is very similar to what she says in the first video. "More pink please!" "All this pink is making me happy!" "Just a little more pink!" etc.

Also, I didn't want to detract from the finalists who made some stellar baked goods. Well, half of them did. The others should kindly wrap their offerings in tin foil and throw them in the trash.

Recipe for Mazzy's Macaroon Nests will be at the bottom of this post. Finalists are as follows:

Mazzy's Macaroon Nests (makes 12 cookies)

Photo3

INGREDIENTS:

2 egg whites

2 tablespoons Sugar In The Raw Organic White

1/4 cup Monk Fruit In The Raw Bakers Bag

4 tablespoons all-purpose unbleached or regular flour

Dash of salt

1/4 teaspoon vanilla

2 cups packed flaked coconut

2 or 3 drops pink food color, if desired

36 tiny M&M's (or jelly beans)

DIRECTIONS:

Heat oven to 325°F. Line cookie sheet with parchment paper. In medium bowl, beat egg whites and Sugar In The Raw Organic White until foamy and mixture mounds slightly. Beat in Monk Fruit, flour, salt and vanilla on low speed until blended. By hand, stir in coconut. Tint with food color, if desired. Divide batter into 12 mounds on cookie sheet. With dampened fingers, press into ball and make an indentation. Bake 11 to 13 minutes or until lightly browned and set. Cool completely, about 20 minutes. Fill each nest with 3 tiny jelly beans.

TIP: These little nests are fun for spring and summer celebrations. For Christmas, use green coloring for the nests with small red candies for the middle. Or, just form these into small mounds, and enjoy them as chewy coconut macaroon cookies.

Mazzy's Bake-Off was sponsored by Monk Fruit In The Raw but Mazzy really did bake those cookies!
